As a young boy, I fondly remember sitting at my grandmother’s table and hearing the percolator sitting on the stovetop gurgle. The aroma of coffee filled the house as the coffee turned dark and was ready for that first drop to leave the spout.
Since I was a child, I have searched for the perfect-tasting cup of coffee. Over the years, I have tried various store brands, changed types of coffee filters, and even used various filtered water, all to find a better-tasting cup of coffee.
Most people fix their coffee’s taste by hiding it with cream and sugar. Most people love the aroma of coffee but not the taste. The truth is that a large portion of commercial coffee is low-quality beans hidden by over-roasting until the oils coat the beans and become rancid, causing them to taste bitter.
Over many years, my personal search for a better cup of coffee has led me to buy better-quality beans and roast them to temperatures that keep the flavor in the bean rather than roasting it out.
Using good-quality beans and roasting to the right temperature always produces a less bitter and smoother cup of coffee for myself and everyone else—the perfect balance!
